Baking
Wrap beets individually in heavy-duty foil. Place on oven rack ina 375 degree oven. Bake until tender throughout when pierced (1 to 1 1/2 hours)
Boiling
In a 4 to 5 quart pan, boil 1 1/2 to 2 pounds beets, covered inwater until tender throughout when pierced (20 to 45 minutes.) Drain.
Preparation
To prevent beets from bleeding during cooking, boil or bake themunpeeled. After cooking, let cool then trim off roots and stems and slipoff skins. To avoid staining your hands, slip skins off under coldwater.
Usage
Use shredded raw or cooked beets in salads.
