Sauteed Beet Greens
Beet greens have an earthy flavor (like spinach) and provide plenty of vitamin A and potassium. Coarsely chop beet greens and butter steam up to 5 cups, using 2 tablespoons of butter.
Cook, stirring, for 1 minute. Add 1 to 2 tablespoons liquid,cover, and cook until greens are just tender to bite (2 to 5 minutes.)
