Curried Broccoli Soup

Serves 8
                                         

1 ½ lbs Underwood Family Farms broccoli
¼ C  butter
1 T curry powder
1 medium onion, chopped
6 C chicken broth
2 large thin skinned potatoes, cubed - Yukon Gold is good
5-6 Underwood Family Farms carrots, thinly sliced

Trim flowerets from broccoli. Set aside.  Cut remaining broccoli into small pieces. 
In a 6-8 qt kettle, melt butter over medium heat; add curry powder andonion and stir for 5 min.  Add broth, potatoes, chopped broccoli andcarrots; cover and simmer until potatoes mash very easily, about 30mins.  Puree in pot with an immersion blender or whirl in blender.
If desired, add broccoli flowerets and cook until tender crisp. 

Otherwise save the flowerets for Underwood Family Farms’ Broccoli Delight Salad.
