Don't be scared of your squash

Sorry I have been absent from the blog over the past few weeks, but as we move into the next season I promise to get back on track and  back to posting up recipes, tips and other veggie chronicles.

Halloween approaches and squash is showing it's sometimes less than pretty face in big numbers, so it's important to Show your Squash Who's the Boss!   I've been staring down my butternut squash from last week's box as it has moved silently into various different locations on my counter top.  It even seemed to disappear at times, blending in with my buttery painted kitchen walls.  But last night I took matters into my own hands and wrestled that quiet monster into a delicious squash soup.  Yep, that guy was not going to make the best of me!  I made the Thai version of the soup recipe that I just posted up and there were no leftovers for lunch today (the dog got to lick the pot, he loved it!).

So embrace your squash, saute it, mash it, bake it - throw it a soup pot!  And fear not, for more squash recipes will be posted later this week as we take on this seasonal wonder together.
