Vegetable Juice/Soup Ideas
Do you find that some weeks you just can't consume everything in your box? You're not alone. Depending on what is going on in my household, even as someone that eats primarily fruit and vegetables, it can happen and I find at the end of the week my refrigerator drawers are still brimming with produce. When this happens, what can you do to prevent having to throw away your prized produce?
The easiest thing to do is juice greens, carrots, really anything, I have even juiced lettuce although I rarely have that leftover since we try and eat salad daily. You might be saying to yourself that you are not a hard core juicer. That's okay, you can mix your fresh juice with vegetable or tomato juice from the store to make a more nutritious "V8" style concoction if you prefer. Or depending on what you are juicing, you can mix it with fruit for a healthy smoothie, bananas and berries can "cover-up" the vegetable taste for those that don't relish it. The point is that you could be 1) saving your produce from a date with the garbage can or compost pile and 2) consuming more fresh produce and your body will thank you! You just need a good countertop centrifugal juicer.
You can also throw just about anything in a pot with some water and create a soup stock or vegetable soup that can then be frozen for later. Friday nights are usually busy with the kids going out to do their own thing and we may or may not be doing the same, having some healthy leftovers available for a quick meal for whomever needs it can be great.

Spinach, any green, carrots, carrot greens (yes!), beets, beet greens, tomatoes, cucumbers, celery, cabbage, broccoli stalks (yes!). I usually take all my "trimmings" and juice them.
Spinach and greens go well with apples, oranges, lemons, limes
Carrot and beet juice goes well with tomatoes, cucumbers, cabbage, broccoli (you can mix your juice with prepared vegetable juice, some seasonings, even the kids might like it!)
Basic Vegetable Soup
4 cups of water
1 packet of vegetable, chicken or beef stock
4-5 potatoes, sweet potatoes, or a small squash, cubed
carrots, broccoli, cauliflower, shallots, corn, peppers, basically any vegetables you like - maybe a handful of each
Bring water to boil in a big pot
Chop potatoes and anything else needing chopping, throw in pot
Add soup stock, stirring now and then
Let everything boil until potatoes (or what ever you are using) are starting to get soft
Season as needed, you can add sausage, chicken or leftover meat if you like
Eat it chunky or puree in batches in the blender or if you have it use an immersion stick blender.
