Roasted Kohlrabi and Cauliflower
4 kohlrabi, peeled
1/2 head of colored cauliflower
1 T. olive oil
2 cloves of minced garlic
1/3 cup shredded Parmesan cheese (I like Trader Joes)
Preheat oven to 425 degrees. Cut the kohlrabi into 1/2 lengthwise and slice into 1/4 inch slices. Separate cauliflower into smaller pieces and slice into 1/4 inch slices (as best you can - it cooks much better if everything is about the same width). Combine olive oil, garlic and salt and pepper to taste in a large bowl and toss the vegetable slices in the mixture to coat. Spread out in a single layer on a baking sheet covered with parchment paper.
Bake in the oven until browned, appx. 20 minutes, be sure to stir occasionally to keep from burning. Remove from oven and sprinkle with Parmesan cheese, return to oven for about 5 minutes until cheese is melted and browned.
