Irish Colcannon
I realize that as of this post that St. Paddy's Day is a not yet upon us, but it's never too early for a bit o' Irish flair - enjoy and use up that cabbage!
2 lbs. potatoes, peeled and cubed
1 head green cabbage, cored and chopped
1/4 c butter
1/2 c - 1 c milk or half-n-half
6 slices bacon, cooked and crumbled
4 green onions, finely chopped
2 T. chopped parsley
Place the potatoes and cabbage in a large pot and cover with water, bring to a boil and simmer for approximately 20 minutes until tender. Drain thoroughly and return to pan to mash potatoes and add butter and enough milk to make like the consistency of mashed potatoes. Add bacon bits and green onions and stir to mix. Serve in individual soup plates garnished with parsley and a nice smattering of butter.
Note: You can make this a vegan dish by substituting a spread like Earth's Balance for the butter and the non-dairy milk of your choice (I like coconut milk). Then garnish with veggie baco bits.
