Vegetable Fried Rice
I make a meal out of this! You can add whatever is rolling around in your vegetable bin to help clean out extra veggies or use leftover amounts from other recipes. This is the basic recipe, add anything you like. It's fantastic with cilantro and quartered tomatoes for a Thai twist.
1 T olive oil
1 tsp sesame oil
2 cloves of minced garlic
1 inch piece of ginger, peeled and chopped fine
1 diced onion
3 diced carrots
2 diced celery ribs
1 cup of sliced mushrooms
1-2 cups chopped Tatsoi, Spinach or other greens
3 cups cooked rice
2 T Mirin (Japanese cooking wine) or Sherry (optional)
4-5 T Soy Sauce
2 eggs, beaten (optional)
2 green onions, sliced thin
Sriracha sauce (optional)
Heat oil in wok or large skillet over medium heat. Add onion and cook until translucent, about 5 minutes. Add carrots and celery and cook until almost tender, about 8-10 minutes.
Add mushrooms and cook until tender about 5 minutes. Add greens and rice and cook until the chard is wilted and the rice is warmed through. If you are using eggs, beat with mirin, soy sauce and Sriracha sauce. Stir in the liquid and mix in until all the rice and vegetables are coated. Sir until just cooked and add green onions.
