Avocado and Cabbage Slaw

I had half of head of cabbage leftover after making Asian Slaw and a ripe Pinkerton that was looking like it needed a purpose....

5-6 cups shredded green cabbage
1 cup of shredded Underwood carrots (any color, the maroon was colorful)

1/2 chopped red or orange pepper

1 diced Pinkerton avocado
3 T minced red onion

3 T chopped cilantro
1 clove of garlic, pressed or minced
3 T lemon juice 

3 T tahini or 4 T mashed avocado

dash of sea salt
fresh ground pepper

Toss together the first six ingredients in a large bowl.  Mix the lemon juice and tahini or avocado together with the garlic, salt and pepper and toss with the slaw.
