From the Kitchen of Chef Jeff

Do you ever wonder what to do with Swiss chard?  This green is very versatile and extremely nutritious.  You can serve raw in a salad mixed with other greens, sauté` with garlic, or use in lasagna.  Pretty much anywhere spinach is used, you can replace with Swiss chard.

In this recipe, we add Swiss chard to the standard pesto mix for a different flare.

INGREDIENTS:

6 cups fresh Swiss chard, stems and ribs removed.

1 cup sweet basil

½ cup roasted garlic

½ cup olive oil

Place all ingredients into a food processer and process until minced.  Add salt to taste.

You can add this pesto to any pasta or sauce.

Enjoy!
