Quinoa with Roasted Vegetables

2 cups of cooked Quinoa (you can get this at Trader Joes or Fresh & Easy)
1 zucchini, chopped
1 bunch spinach, chopped
1 -2 summer squash, chopped
1 large tomato, cut in large chunks
1 handful of mushrooms, cut in half
1 -2 peppers (yellow or red), chopped
l leek, sliced
1 -2 T olive oil
Dried or fresh oregano (to taste)
Dried or fresh chives (to taste)
Vegetable Seasoning (Fresh & Easy or Trader Joe's 21 Seasoning Salute)
Salt & Pepper (to taste)

Sprinkle vegetables with olive oil, black pepper, oregano, salt, chives, and the vegetable seasoning rub.

Bake in the oven at 375 until they reached the desired texture (about 10-15 minutes). Combine the veggies with the quinoa, sprinkle with a bit more olive oil, salt and pepper to taste.
