Asian Inspired Pickles

From CSA Member Grace – this was so fantastic we had to share it with everyone!

1 lb Underwood pickling cucumbers, scrubbed clean
1 – 2 tsp. sea salt
1 cup white or rice vinegar
3/4 – 1 cup sugar
2-3 cloves of garlic, minced
1 tsp minced fresh ginger
1 tsp sesame seed oil
Red chili flakes to taste

Sprinkle salt over sliced cucumbers and let sit for at least 30 minutes. Rinse the cucumbers in cold water and drain. Place cucumbers in a quart size jar. Add remaining ingredients and with the jar lid on tight, shake. Let sit in the refrigerator for a few hours or overnight, shaking every so often to evenly distribute spices and vinegar/sugar mixture. Will keep up to one week in the refrigerator.
