Cauliflower Pizza

This recipe comes from Robbie, who manages the produce stands at Moorpark and Somis and the farmers’ markets.  She likes it because it is super low in carbs and prefers it when it’s cold rather than hot out of the oven.  You can get creative with this one with the toppings!

Crust
2 cups shredded white Cauliflower
1/2 cup Parmesan cheese
1 egg beaten

Mix cauliflower and Parmesan cheese together and add beaten egg, mix well. I use a pie dish, lightly grease with spray olive oil or Pam, press the mixture into the dish. Bake in 400 degree oven approx. 15-20 minutes until it’s slightly browned around edges.

Toppings
Pizza, Marinara or Alfredo sauce
Parmesan or Mozzarella cheese
Italian seasoning, fresh oregano or basil
Your favorite pepperoni, sausage or veggie toppings

Lightly spread your choice of sauce over the baked crust, add cheese, sprinkle with seasoning or herbs and add your meat and veggies.  Bake for an additional 10 minutes or until cheese is bubbly.
