Tuscan (Napoli) Melon

NapoliMelonsTuscan Cantaloupe is a fruit that is not only tasty but is loaded with lots of nutrients! Specialty Produce asserts cantaloupes are fully ripened and sweet when it has dark green lines. Furthermore, Tuscan Cantaloupes have an excellent source of vitamin A and Vitamin C. They also are high in antioxidants and folate.

Recipe of the Week

Cantaloupe Coconut Lassi

Yield: 1-2 servings
Ingredients:

1 cup coconut water
½ cup plain greek yogurt
2 cups Cantaloupe cubes
1/8 teaspoon cardamom
¼ teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons unsweetened coconut flakes
pinch of salt
2 teaspoons honey
toasted coconut for garnish

Directions:

Gather the ingredients displayed above.

After the ingredients have been collected, combine the ingredients together except for toasted coconut and put them in a blender.
Process until smooth! Then, garnish with toasted coconut.
