Blue Lake Green Beans


Blue Lake Beans are bright crunchy green beans that are also a part of the green bean family. These blue lake beans pack a lot of nutritional benefits. For instance, blue lake beans are fat free, saturated fat free, sodium free, and cholesterol free. Not to mention, blue lake beans are also low calorie and provide a good source of fiber and vitamin C (USDA, 2016).

Recipe of the Week

Blue Lake Bean Salad
Yield: 2-4 servings

1 pound blue lake beans
2 tablespoons chopped shallots
2 tablespoons chopped garlic
¼ cup balsamic vinegar
¼ cup olive oil

Place blue lake beans in a large saucepan. Fill with enough water to cover the blue lake beans, and bring to a boil over high heat. Reduce heat to medium low, and simmer 10 minutes. Drain, and let cool.

In a bowl, stir together shallots, garlic, balsamic vinegar, and oil. Pour over green beans, season with salt and pepper. Cover, and refrigerate at least 1 hour.
