CSA Produce of the Week, October 10, 2016

v-tatsoiTatsoi, which is also called spoon mustard, is packed with many nutrients like vitamin C, carotenoids, folate, calcium, and potassium. With this array of nutrients and its powerful phytochemicals, tatsoi is a healthy, low calorie addition to any meal. Tatsoi contains more vitamin C than oranges, making this an excellent option to boost your immune system. An interesting fact about this veggie: it can be harvested under cold conditions, so it is available year round.

Recipe of the Week

Sweet Potato and Tatsoi Soup
(Yield: 4 servings)

Ingredients:
3 Tablespoons olive oil
1 lb of sweet potato, roughly chopped
1 lb onions, diced
2 Sprigs fresh thyme
3 Cloves garlic, minced
1 Teaspoon salt
Pinch of chili powder
4 cups of water
2 Celery stalks, diced
¼ Tatsoi, roughly chopped or torn
Pepper (to taste)
Additional chili powder & cayenne pepper (to taste)

Directions:
Heat the oil in a large pot over medium heat. Add the onions, garlic, chili powder and cayenne pepper. Saute until the vegetable soften, about 3 minutes. Add the celery, sweet potato, thyme and salt and saute 3 minutes. Add the water and increase the heat to high. Bring mixture to boil, then return to a simmer and cook until the vegetables soften, about 30 minutes. Stir in the tatsoi and cook for another5 minutes. Add pepper and any additional salt, chili powder or cayenne pepper if needed. Remove the thyme and enjoy!
