CSA Produce of the Week, October 24, 2016

Hachiya PersimmonsHaychia Persimmons, like many fruits, are full of fiber, vitamins and minerals such as Potassium, Vitamin B6, Beta Carotene and Vitamin C. It is these properties that may help your body process food, lower blood pressure, improve eye health, and possibly even aid your immune system. Haychia Persimmons come from the family Diospyros and were found to be native originally to China, but with over 1,000 estimated varieties this fruit can have many forms. When ripe, the fruit is soft and sweet with a texture similar to plums or apricots, which make them a fall favorite and applicable in many spice dishes for the holidays!

Recipe of the Week

Vegan Persimmon Ice Cream

Ingredients:
– 2 Ripe Haychia Persimmons
– Coconut/Almond/Rice/Cashew Milk

Directions:
Freeze the ripened persimmons until solid and peel the skin off with a potato peeler.
Carefully cut the frozen fruit into manageable chunks and process in a food processor.
Add in ¼ cup of whichever non-dairy milk you desire and continue to process until texture resembles that of ice cream! (note: you may use regular milk products as well, but the ice cream will not be vegan)

Serve and enjoy!
