Bok Choy, also known as leafy Chinese cabbage, is a popular vegetable in East-Asian regions. Bok Choy is a low calorie vegetable, and is a rich source of vitamins, minerals and antioxidants that may help protect against breast, colon, and prostate cancers as well as possibly helping reduce bad cholesterol levels in the blood. Bok choy may aide in building and maintaining our bone structure and strength; and it also may help improve our skin texture and smooth wrinkles because of its Vitamin C content.

Stir Fry Bok Choy
Yield: 6 Servings
– ½ Bunch Bok Choy
– 2 Cloves Garlic (Crushed and Chopped)
– 1 Tablespoon Vegetable oil
– Salt to taste
Heat oil in a large skillet over medium heat and cook the garlic in the hot oil until fragrant. (About 1-2 minutes)
Mix in the bok choy and stir until the green parts of the leaves turn bright green with semitransparent stalks. (5-8 minutes) Sprinkle with salt to taste.
