Melon Pops

A fun and refreshing way to enjoy melon – kiddos will love it!

Underwood Melons

2 cups ripe Sharlyn, Galia, Saticoy, French Morning or Ambrosia or any melon, cubed or balls
1 cup full fat coconut milk or heavy cream
2 – 4 T local honey
Juice from 1/2 lime
Dash of sea salt
1 tsp almond or vanilla extract (optional)
Popsicle mold for 6-8 or dixie cups and wooden sticks

In a blender or food processor, process the melon until pureed. Add remaining ingredients and process until well blended. Taste for sweetness, add more honey if you need more sweetness. Freeze until firm and enjoy in the heat of the afternoon!
