TangerinesPixie tangerines are small and mighty, yet they have a higher amount of some vitamins, minerals, and antioxidants compared to oranges. Surprisingly, pixie tangerines may contain more vitamin C and A, which could help fight against common colds. Its’ high amount of fiber could help with colon cancer and possibly heart disease. With the higher fiber count this little guy could help aid in weight loss by keeping you full throughout your day. Pixie tangerines may even be beneficial for a post workout snack, replenishing the dehydrating cells.

Recipe of the Week

Apple Avocado Salad with Pixie Tangerine Dressing: Yield: 10 Servings

Ingredients:
10 oz Baby Greens
¼ cup chopped Red Onion
½ cup chopped Walnuts
⅓ cup crumbled Blue Cheese
2 tsp Lemon Zest
1 Apple, peeled, cored and sliced
4 Pixie Tangerines, juiced
½ Lemon, juiced
1 clove Garlic, minced
2 tbsp Olive Oil
1 Avocado, peeled, pitted and diced

Directions:
In a large bowl, toss together baby greens, red onion, walnuts, blue cheese, and lemon zest. Mix in the apple and avocado. In a separate bowl mix the tangerine juice, lemon juice, lemon zest, garlic, and olive oil. Add dressing to the salad and enjoy!
