I recently started following the Lyn-Genet Plan and I am learning how to eat again!  It’s a really interesting concept that makes perfect sense to me and I’m feeling way better since starting it.  She uses citrus zest on everything – wow it really adds to the flavor and provides an added health benefit.  I suggest you try it and check out the benefits of it here.

chard3 T Butter or Olive Oil
3/4 cup of fresh breadcrumbs
2 bunches of chard, sliced
1 large onion, sliced
2-3 cloves of garlic, minced
4-5 Shiitake mushrooms, sliced
3-4 carrots, thinly sliced
1 tsp of orange zest (optional)
1/4 cup of shredded Parmesan or Mancheco cheese (optional)

Make breadcrumbs:
Melt 1 tablespoon of butter over medium heat in a saucepan. Add fresh breadcrumbs and a pinch of sea salt and ground pepper if desired. Cook, tossing, until golden brown, 2-3 minutes. Set aside.

Melt remaining butter in a large skillet over medium heat and saute onions and garlic until fragrant.  Add carrots and mushrooms and cook for approximately 2-3 minutes, add chard and continue to saute until leaves are wilted and any liquid has evaporated, 5-6 minutes.  Add orange zest and parmesan cheese (if using).

Top with breadcrumbs.
