Stir Fried Greens Asian Style

I have been battling the flu since Christmas and have no appetite lately.  Greens are the only thing that sound good to me, I decided to listen!  So I cooked up this batch of greens and then added it to soups or rice bowls all week.  I’m on the mend so apparently my body knew exactly what it needed to heal.

Ramen

1 T olive oil
3 cloves of garlic, thinly sliced
½ onion, thinly sliced
8 cups of mixed greens, chopped (mizuna, kale, spinach, tatsoi, bok choy, chard,  kohlrabi tops, turnip tops – I used mizuna, kale and spinach)
2 tsp crushed red pepper (optional or adjust to 1 tsp for less spice)
1 T sesame oil
1 T soy sauce
1 T oyster sauce

Heat olive oil over medium high heat in a wok or large skillet. Add garlic and onions, stir fry for 1-2 minutes until starting to soften. Add crushed red pepper and cook for another minute. Add sesame oil and greens and cook just until greens are wilted – about 2 minutes, then add the soy sauce and oyster sauce and cook another minute until everything is heated through.
